Hot Chocolate Cookies
Ingredients
For the Cookies
• 1 package chocolate cake mix
• 2 eggs
• 1/4 cup vegetable oil
Important: Only use these three ingredients—do not follow the ingredients listed on the back of the cake mix box.
• Large marshmallows, cut in half
For the Chocolate Icing Glaze
• 2 cups powdered sugar
• 4 tablespoons unsalted butter, melted
• 1/4 cup unsweetened cocoa powder
• 1/4 cup hot water
• 1/2 teaspoon vanilla extract
Optional topping:
• Sprinkles (holiday, chocolate, or whatever makes you smile)
Instructions
Make the Cookies
Preheat your oven to 350°F.
- In a bowl, mix together the chocolate cake mix, eggs, and vegetable oil until fully combined.
- Drop spoon-sized balls of dough onto an ungreased cookie sheet.
- Use the back of a spoon to gently flatten each cookie.
- Bake for 6 minutes.
Add the Marshmallows
- While the cookies bake, cut large marshmallows in half.
- After 6 minutes, remove cookies from the oven and place one marshmallow half in the center of each cookie, cut side down.
- Return cookies to the oven and bake for 3 more minutes.
Remove cookies from the oven and let them cool slightly while you prepare the glaze.
Make the Icing Glaze
1. In a bowl, mix together:
• Powdered sugar
• Melted butter
• Cocoa powder
• Hot water
• Vanilla
2. Stir until smooth and glossy.
3. Spoon the glaze over each cookie, letting it drip naturally over the marshmallow.
4. Top with sprinkles if desired.
